This isn’t so much a recipe as a reminder during this hot weather how lovely a Caprese salad can be!
The key is to get the best tomatoes you can find and to seek out quality fresh mozzarella. Burrata cheese is amazing too if you can find it. I bought a basil plant and am trying to keep it alive through the summer. The basil pieces are hiding in this pic between the tomato and cheese slices. I love it on a bed of Arugula as shown and I got to use the Olive Oil we brought back from Spain while visiting our daughter. BONUS!! A drizzle of Balsamic vinegar and a little salt and pepper and you are good to go!
