I love good quality soup that is good for you too! This one gets a LOT of broccoli into you with little downside. Yes, bacon and milk are ingredients… But read on!
Ingredients:
2-3 Tbsp of Avocado oil
I large onion ~ diced.
3 stalks of celery ~diced
6 slices of no nitrate quality pepper bacon. ( Hemplers here in Seattle) Diced.
Costco sized bag of Broccoli Florets (3 lbs) If cutting up your own broccoli, don’t use big stems.
2 cartons of Kirkland Organic Chicken STOCK not broth or 2 quarts of your own home made. Stock has a lot more flavor than broth.
Montreal Steak Seasoning to Taste ( Salt Pepper and Garlic powder combo)
Sriracha to taste
Couple good shakes of Worcestershire sauce
Soy Sauce (optional)
3/4 quart organic whole milk
Method:
In large heavy pot, add oil and heat to med high. Add chopped onion, celery and bacon. Stir frequently until bacon is crispy and veggies are lightly browned. Add Montreal Steak seasoning (about 1 tbsp…less if you are low sodium) and Worcestershire. You now have a “flavor base” Extra garlic powder and pepper are nice too. Season to taste. * Side note~ If you don’t have Montreal Steak seasoning, It’s really just course ground salt, pepper and garlic powder premixed. It’s super convenient though so get some! 🙂
Add the bag of Florets and both the cartons of Chicken stock. Bring to a boil. Lower heat, cover and boil on medium heat until broccoli is quite soft. Remove from heat and use immersion blender to smooth out. Add milk as you go to assist in the blending process. I usually use about 3/4 of the quart. If you add it all, it can become too thin and flavorless.
You may need to re-season at this point and add the sriracha if desired. If the soup is bland that typically means more salt. I use some soy sauce as an option when I get tired of dumping in salt! Season, taste…repeat…until it tastes good!
