One of the most popular recipes I have ever given out is my Turkey Meatloaf recipe. It’s got it all!!
When my husband first tasted this one he said , and I quote ” I don’t ever need to eat Red Meat loaf again” And he never has to my knowledge.
It is Quick, Easy and Healthy. Let’s face it, we all want comfort food sometimes. This recipe gets it done with out going off your healthy eating plan.
Ingredients :
I package of ground turkey 20 oz (lean)
1 lb or 4 sausages of Chicken Italian sausage. (Isernios in Seattle) “Hot” if you can get it.
1/2 large onion diced fine
1/2 cup Italian Dressing (I like Paul Newmans, Lite is fine if you’re watching calories)
3/4 cup crumbled Feta
2 eggs
1/2 cup raw oatmeal
Pepper , sriracha, italian seasoning. to taste.. I change these depending on my mood.
If I can’t find Hot Chicken Italian Sausage , I use a little sriracha. also, I just squish it out of the casings..
Put it all in a big bowl, wash your hands , (take your rings off or you’ll be sorry)
and go to town squishing it all together for a few minutes.

375 degrees for an hour and 10 minutes. Let it rest for about 10 minutes after you pull it out and it will reabsorb the juice on the outside of the loaf .
I like to use this lower flat pan as opposed to a traditional loaf pan.. not sure why.. I think it cooks faster and more evenly.
If you throw a couple of potatoes in ..you can bake potatoes about he same cooking time.. I do yams at the same time. But put a bit of foil on the rack below ..otherwise you will be cleaning your oven soon! Either way ..scrub them well and poke them a lot with a fork.. they go well with this.
ENJOY!
